Papari Valley

Our mission is to find the best synthesis of Georgian Qvevri and modern winemaking.
We aim to preserve and save the most important - idea of Qvevri wine.

Papary Valley is the family farm, located at the Papris mindvrebi (Papari Field) in the village Akhasheni, Kakheti.

Vineyards and cellar are situated on the slope of the mountain and has wavy relief, because of what its name is Papari Valley, which in Georgian means the hair of horse. That is why the horse is depicted on the logo, which was painted by the family member, Sandro.

The innovative system of 3 terraces:

First time in Georgia in cellar for the creation of wine Papary Valley uses an innovative system of 3 terraces of Qvevri:
I and II terrace are situated in Marani, but the III terrace is situated in the basement.

I terrace is used for fermentation, II and III terraces are used for aging of wine and its transfusion. Transfusion of wine from one terrace to other happens by gravity force.  this method gives to the young wine a chance to develop in the natural environment and prevent it from damage on microbiological level.
